There is nothing better than the comforting bite of a soft bun that envelops a little tower of yumminess. Burgers are our Sunday bbq treat and guilty take-away pleasure. We almost always associate them with juicy beef patties or coated chicken breasts, crunchy lettuce leaves and spicy condiments. I already have a favourite veggie burger, with herby chickpea patties and red onion chutney which has become a great hit with friends. The perfect solution for using up this chickpea soup leftovers. Now it’s time to bring aubergines in the spotlight.

Veggie Burgers with Aubergines

Ingredients
  1. 2-3 large aubergines
  2. 1 large onion
  3. 1-2 cloves of garlic
  4. 100 gr of melty Cheese, eg mild cheddar or kefalotiri
  5. 80 gr bread crumbs
  6. Flour
  7. 1 egg
  8. Olive oil
  9. Salt
Instructions
  1. Skin the aubergines and make a pure with the mixer or cut them very thinly.
  2. Do the same with the onion and the garlic cloves.
  3. Heat up a large pan, add 2 spoons of olive oil and cook it for a while, then add the aubergine and the salt.
  4. Cook for 10-15 minutes, until the aubergine is a puré and well cooked.
  5. Take it off the heat and let the aubergine mix cool down.
  6. Once cooled, add the grated cheese, the egg and the bread crumbs. Mix well and let the mixture sit in the fridge for at least 30 minutes.
  7. Form the aubergine patties with your hands to the size of your buns, lightly dust with flour on both sides and cook them in a pan with a little bit of oil.
  8. Cook it until it is brown, no need much time, as all the ingredients are cooked.
Notes
  1. Enjoy your sweet and silky aubergine burgers with spinach leaves and a few refreshing cucumber slices. I usually have a side of sweet potato fries. I can tell you one thing: Hipsters don't do any better than this.
